I’d like to start by mentioning how grateful I am for the first 6 months with all of you at Sagemoor Estates. Meeting you all and sharing in your tasting experience memories has been wonderful. My mantra for the next 12 months: let’s make more MEMORIES!

I wanted to start a little segment within our emails to capture quick tidbits of information that I would find useful if I were in your shoes. This blossomed into an awesome series of emails. Whether you’re planning a visit, needing some award-winning wine for yourself, family or friends, or needing to find us in the world outside of the Walla Walla Valley, this is where to find this information!

Events & Tastings in Walla Walla & Beyond

February 14th - Valentine’s Day pizza & wine collaboration with Moon Crust Pizza at the Estate House. Join us at the Estate House, reservations available from 4pm-7pm on Friday, February 13th. Mandy’s Sweet Potato & Turkey Chili

Paired with 2021 Miguel The Man Cabernet Franc/Merlot

 Ingredients:

  • 2 lbs lean ground turkey

  • 3 small sweet potatoes, peeled and cubed

  • 1 poblano pepper, diced

  • 1 sweet onion, diced

  • 6 cloves garlic, minced

  • 2 cans crushed tomatoes (15 oz each)

  • 2 cans diced tomatoes (15 oz each)

  • 2 cans black beans, rinsed (15 oz each)

  • 1/2 cup Miguel The Man

  • 1 tablespoon tomato paste

  • 2 tablespoons chili powder

  • 1 tablespoon cumin

  • 1 dash cayenne pepper

  • 2 tablespoons olive oil, divided

 Toppings (optional):

  • Cilantro

  • Sour cream

  • Diced jalapeños

  • Cotija cheese, crumbled

Instructions:

  1. Preheat the oven to 400°F (200°C).

  2. In a large Dutch oven, heat 1 tablespoon of olive oil over medium heat. Add the onions and poblano peppers, sauté until the onions are translucent. Add the garlic and cook until fragrant. Remove and set aside.

  3. Add the remaining 1 tablespoon of olive oil to the Dutch oven and cook the ground turkey until browned and reaches an internal temperature of at least 150°F.

  4. Stir in the chili powder, cumin, and cayenne pepper to coat the turkey. Return the onions, poblano peppers, and garlic to the pot.

  5. Add the crushed tomatoes, diced tomatoes, black beans, Miguel The Man, tomato paste, and bring the mixture to a simmer.

  6. Cover the Dutch oven and place it in the preheated oven for at least 3 hours, checking occasionally to ensure the chili reaches your desired consistency.

  7. Adjust the thickness of the chili by adding more tomato paste to thicken or chicken/vegetable broth or more Miguel to thin, as desired.

  8. Serve with optional toppings. Enjoy!
